Bacon Wrapped Country Style Ribs
I have to say, Country Style Ribs are one of my favorite, simpler cuts of meat. It’s easy to cook and tastes delicious! I’m always looking for new recipes to try with Country Style Ribs. While on Pinterest, I came across a recipe that baked the ribs on top of a bed of onions. Sounds scrumptious enough BUT I thought it needed more and what always makes a recipe better? Bacon. These Country Style Ribs are seasoned with a sweet BBQ rub and wrapped from top to bottom in thick cut bacon then baked to perfection on a bed of onions. Yum!!
What you will need for this recipe
Start with one package of Country Style Ribs seasoned with Lambert’s Sweet Rub O’ Mine BBQ. Then you’ll need thick cut bacon (my favorite is Wright’s ), salt and pepper, and 1 yellow onion sliced thick. Have a 9×13 baking pan ready and some toothpicks to keep the bacon in place.
How to make Bacon Wrapped Country Style Ribs
First you generously season your country style ribs with Lambert’s sweet BBQ rub. (I would have a hard time giving up this rub but, if you wanted, this recipe could easily be converted to be keto friendly just by switching out the seasoning) Wrap your ribs in bacon, be sure to not leave any gaps, the more bacon the better! I used 2-3 pieces of bacon for each rib. Slice your onion nice and thick and lay flat in your greased pan so your ribs have a nice bed to lay on. Add Bacon Wrapped Country Style Ribs to your pan and sprinkle with salt and pepper to your liking. Pop in the oven and cook slowly for about an hour then broil to get the bacon nice and crispy on top.
I paired it with my Garlic Parmesan Broccoli. This recipe has become my favorite way to cook Country Style Ribs and I will be returning to it often! It was a hit with the family too!!
Bacon Wrapped Country Style Ribs
These amazing country style ribs are just the perfect blend of sweet and savory you will fall in love with each bite! They are wrapped in bacon, nestled on a bed of onions and cooked slowly to perfection!
- 1 package of Country Style Ribs about 2-3 lbs
- 3 tbls Lambert's Sweet Rub O'Mine Barbecue or your favorite barbecue rub
- 1 package of bacon
- 1 yellow onion sliced thick
- salt & pepper
Preheat your oven to 335.
Cut onion into thick slices (about 3/4 inch) and cover the bottom of your greased pan. Onions should lay flat and cover the pan enough so that ribs will be able to sit flat on top of them.
Season Country Style Ribs with Lambert's Sweet Rub O'Mine. Be sure to turn ribs and season all sides.
Wrap bacon around each rib, bacon should cover the whole rib, don't leave any gaps. I used about 2 pieces of bacon for each rib. Secure bacon with toothpicks to ensure that it stays in place. Sprinkle the tops of bacon wrapped ribs with salt & pepper.
Place country style ribs on top of the bed of sliced onions, making sure that they are all laying flat on top of the onions. Cover pan loosely with foil. Place into preheated oven and cook for about 1 hour (or until internal temperature reaches 160°). Remove pan from oven, remove foil and return pan to oven for about 20 minutes. Remove from oven and serve.
